Tostadas

Makes 12

Farrah’s Burrito Tortillia's
1 tbsp olive oil
4 tomatoes, finely diced (for salsa)
1 red capsicum, finely diced
1 red chilli, finely diced
½ small red onion, finely diced
1 tbsp fresh coriander, finely diced
1 tbsp lime juice
150g cooked chicken, shredded
¼ iceberg lettuce, thinly sliced
2 radishes, sliced
2 tomatoes, diced (for topping)
Salt and pepper

Preheat oven to 180°C.

Cut each tortilla into 6 pieces, lightly brush with olive oil and place on a baking tray. Bake in the oven for 5–8 minutes, until lightly golden. 
Remove from the oven and allow to cool.

To make the salsa: 
Mix together the tomatoes, capsicum, chilli, red onion, coriander and lime juice. Season with salt and pepper to taste.

Top each tortilla piece with a teaspoon of salsa, shredded chicken, lettuce, tomatoes and radishes
