SPICY LAMB KOFTA WITH TZATZIKI

Serves 4

4 Farrah’s Wholemeal Wraps
600g lamb, minced
3 tsp parsley, finely chopped
3 tsp mint, finely chopped
2 cloves garlic, finely chopped
1½ tsp ground cumin
2 tsp ground coriander
1 tsp smoked paprika
1 tsp chilli flakes 
1 packet salad leaves
1 tub (200g) Cucumber and Mint Yoghurt Dip (Tzatziki)

In a bowl, mix together the lamb, parsley, mint, garlic, cumin, coriander, smoked paprika and chilli flakes. Divide the mixture into 8 balls and shape each ball into logs.

Gently fry each side until golden brown and the koftas are cooked thoroughly.

Place a handful of salad leaves down the middle of each wrap, add two koftas and 2–3 tablespoons of Cucumber and Mint Yoghurt dip. Fold up bottom third of the wrap, fold over the left side, then right side to form the wrap.
