Air-fried High Protein pistachio & matcha Cannoli

INGREDIENTS

5 Farrah’s Low Carb High Protein Wraps
⅔ cup pistachio spread
½ cup finely chopped pistachio nuts
3 cups Greek yoghurt
3 teaspoons matcha powder
3 - 4 scoops plant-based vanilla protein powder
100g 85% dark chocolate

EQUIPMENT

Cooking spray or light oil for brushing
Aluminium foil 
Toothpicks

METHOD

  1. Cut 5 pieces of aluminium foil, each approximately 15cm x 10cm. Roll each piece of foil into a tube shape, about 2 ½ cm in diameter and 10cm long (firm but not too tight!).

  2. Lightly brush or spray one side of each wrap with oil.

  3. Wrap each Farrah’s Low Carb High Protein Wrap around the foil tube (oiled side facing out) and secure with a toothpick through the foil and both layers of wrap.

  4. Preheat air fryer to 180°C for 2-3 minutes. Air fry cannoli shells for 4 minutes, then carefully turn over. Cook for a further 3 minutes.

  5. Remove from air fryer and cool for 2-3 minutes, before carefully sliding out toothpicks. Gently twist out the foil tubes.

  6. Complete this process with the remaining wraps. Leave to cool completely on a wire rack.

  7. Dip each end of the cooled shells into the pistachio spread, then roll in the chopped pistachios.

  8. Mix together the yoghurt, matcha, and protein powder, until it has a mousse-like consistency. Pipe this into the cannoli shells and place back on the wire rack.

  9. Melt chocolate and drizzle it over the cannoli. Place this in the fridge for 10 minutes to harden. Serve and enjoy!
