BAKED BREAKFAST PINWHEELS

INGREDIENTS

1 Farrah’s Garden Spinach Wrap
2 tbsp cream cheese
1 - 1/2 cups Gruyere cheese
6 slices shaved ham
Baby spinach leaves
6 eggs
3/4 cup milk
1 tbsp fresh Italian parsley
Olive oil spray

METHOD

  1. Preheat oven to 180°C degrees. Grease muffin tray with oil spray.

  2. Grab a wrap and spread a thin layer of cream cheese, right to the edges. Sprinkle over a handful of gruyere cheese, followed by sliced ham, baby spinach leaves, and another sprinkle of cheese.

  3. Roll wrap up tight, trim each end, then slice into 12 even sized pieces. Place rolls into greased muffin tray.

  4. Whisk eggs, milk, and Italian parsley, then pour eggy mixture over each roll.

  5. Top with gruyere cheese and bake for 20 minutes, or until golden brown and the egg has set. Be sure to spin the tray every 10 minutes as it cooks.
