High protein breakfast burritos

INGREDIENTS
2 Farrah’s Low Carb High Protein Wraps
200g kumara, peeled and diced into 1cm cubes
1 medium onion, diced
2 garlic cloves, diced
250g beef mince
1 packet Farrah's Taco Spice Mix
1 cup cottage cheese
½ avocado, sliced
2 handfuls of fresh rocket leaves
Hot honey, to drizzle
Olive oil
Salt and cracked pepper
Lime wedges for serving (optional)
METHOD
Preheat oven to 200°C. Toss kumara with olive oil, salt, and pepper. Spread on a baking tray in a single layer.
Roast for 25-30 minutes, turning once halfway through, until golden.
Heat a drizzle of oil in a pan over a medium heat. Add onion and cook until softened. Add garlic and cook for a further minute. Add beef mince and cook until browned, breaking up mince as it cooks.
Add half of Farrah’s Taco Spice Mix and cook for another 2-3 minutes until beef is well-coated and cooked through.
Reduce oven temperature to 180°C degrees. Push each wrap into Farrah’s bake tin (or an oven-proof bowl). Bake for 5 minutes or until crispy and golden. Remove from oven and cool on a wire rack.
Place each wrap bowl on a serving plate. Build with fresh rocket, roasted kumara, mince, cottage cheese, and avocado slices.
Drizzle with hot honey, a sprinkle of chilli flakes, and a squeeze of lime. Enjoy!
