BBQ chicken ENchiladas


Serves: 4

INGREDIENTS

1 large rotisserie chicken
1 can chopped tomatoes
1 can mild Mex beans
1 tbsp Farrah’s Taco Mix
1 onion, roughly chopped
1 cup corn
½ cup BBQ sauce
Salt & pepper
6 Farrah’s Snack Wraps
½ cup tomato puree
1 ½ cups grated cheese
1 avocado
Sour cream
Coriander

METHOD

  1. Remove the rotisserie chicken from packaging and carefully remove the meat, making sure to leave any bones behind. Shred the meat into a large bowl.

  2. Roughly chop the onion, then gently sauté in a frying pan until soft, then add to the bowl along with the chicken (can do this on BBQ or stove top).

  3. Add the beans, Farrah’s Taco Spice Mix, corn, BBQ sauce, and salt & pepper to the bowl and stir well until combined.

  4. Preheat the oven or BBQ to 180°C.

  5. To build, take one of the snack wraps, place 1/4 cup of filling into each wrap and roll up.

  6. Line all the prepared enchiladas into a baking dish seam side down, then in a small bowl mix the tomato puree and taco mix then pour down the middle of the enchiladas. Top with the grated cheese and bake for 20 minutes until golden.

  7. Remove from the oven or BBQ and allow to cool for 5 minutes, divide onto each plate and garnish with sour cream, avocado and coriander. Enjoy!

  • Remember, there are no rules with Farrah's, so get creative with your filling combinations!
    • We think Farrah's Smoky Chipotle Spice Mix would taste just as delicious.
