FALAFEL WRAP

2 Farrah’s Burrito Tortillas
Falafel mix (we used Lisa’s Falafel Mix)
Cucumber, sliced into ribbons
Cherry tomatoes, quartered
Iceberg lettuce, shredded
Beetroot hummus
Chopped mint
Pomegranate seeds
Pumpkin seeds

Preheat oven to 180 degrees. Place 1 Tbsp of the falafel mix on to a baking tray to form a ball, repeat with the remaining mixture. Place in oven and bake until cooked through (about 15 mins).

Assemble Wraps with all the remaining ingredients placed down the centre of the wrap.
