Halloumi Wraps with garlic yoghurt dressing

Ingredients

Halloumi Wraps
Farrah’s Garden Spinach Wraps
1 Packet Halloumi, sliced 1-2cm thick
1 Bunch Cos lettuce
1 Can Chickpeas, drained and rinsed
1 Cucumber, sliced
1 Packet Cherry tomatoes, quartered

Garlic Yoghurt Dressing
1 Cup Greek Yoghurt
2 Cloves Garlic, minced
1 Squeeze Lemon juice
Olive Oil

Method

  1. To make the garlic yoghurt, whisk together the Greek yoghurt, garlic, lemon juice, and a dash of olive oil. Add salt and pepper to taste, then set aside.

  2. Over medium heat, add a dash of oil to a fry pan. Fry halloumi until golden on both sides.

  3. Assemble the Wraps with all ingredients and finish by drizzling over the garlic yoghurt dressing.

  4. Tightly roll each Wrap by first folding the bottom, then the left and right sides.
