High protein breakfast burritos

INGREDIENTS
2 Farrah’s High Protein Wraps
2 strips streaky bacon
80g halloumi, sliced
4 eggs
2 tsp lemon juice
½ cup low-fat Greek yogurt
¼ tsp Dijon mustard
Salt
Cayenne or paprika
1 scoop unflavoured protein powder
METHOD
In a small saucepan, gently simmer 2 inches of water over medium-low heat.
In a heatproof bowl, whisk together egg yolks and lemon juice. Place the bowl over the simmering water and whisk constantly for 2-3 minutes until the mixture slightly thickens and lightens in colour.
Remove from heat and stir in Greek yoghurt, Dijon mustard, salt, cayenne, and unflavoured protein powder.
Use Farrah’s Low Carb High Protein Wraps straight from the packet or warm in a dry pan or microwave for 10-15 seconds.
Layer the centre of the wrap with scrambled egg, spinach, halloumi, bacon, and tomato. Drizzle with 2-3 tablespoons of warm hollandaise.
Fold the bottom edge of the wrap up over the filling, fold in each side, then roll tightly. Enjoy!
