high protein chicken smash wraps

INGREDIENTS

2 Farrah’s Low Carb High Protein Wraps
400g potatoes, cut into chips
1 Tbsp olive oil
300g chicken mince
½ tsp garlic powder
¼ telegraph cucumber, sliced
1 tomato, diced
Pickled red onions
Handful fresh dill, chopped
Handful fresh parsley, chopped

High Protein Tzatziki:
½ cup High Protein Greek yoghurt 
1 clove garlic, crushed
Juice of ½ lemon
1 tablespoon fresh dill, chopped
¼ cucumber, grated

METHOD

  1. Preheat oven to 220°C degrees. Toss cut potatoes with olive oil and salt. Bake for 25-30 minutes until golden.

  2. To make the high protein tzatziki, combine Greek yoghurt, garlic, lemon juice, dill, and cucumber in a bowl. Season well with salt and cracked pepper.

  3. In a separate bowl, mix chicken mince with garlic powder, salt, and pepper. Divide seasoned mince between 2 wraps, spreading evenly across the surface. Heat a pan over medium-high heat. Place wraps meat-side down, cook for around 3 minutes or until the chicken is crispy. Flip and cook for a further 1-2 minutes until golden.

  4. Top with cucumber, tomato, fries, pickled onion, and tzatziki. Garnish with fresh herbs, fold in half and serve immediately. Enjoy!
