smoky chipotle steak sandwich with chimmichurri

INGREDIENTS
Chimichurri
1 ½ tbsp extra virgin olive oil
⅓ cup chopped fresh parsley
1 tsp red wine vinegar
1 clove garlic, finely chopped
½ tsp dried oregano
¼ tsp chilli flakes
Smoky Chipotle Steak Sandwich
1-2 rib eye or sirloin steak
1 large potato, julienned
Oil for frying
2 Farrah’s Smoky Chipotle Wraps
½ cup cheese, grated
1 cup baby spinach
METHOD
To make the chimichurri: place all the chimichurri ingredients in a small bowl and mix to combine. Season with salt and pepper to taste.
Season the steak with salt and pepper and cook to your liking. Set aside to rest, then slice.
In a medium sized pot, heat oil to frying temperature. Fry the potato until golden brown. Set aside on a paper towel.
Warm the wraps in a pan or microwave for 10 seconds.
Lay wraps out flat, then sprinkle cheese in the centre of the top half of each wrap. Top with sliced steak and spinach. Spread chimichurri over the centre of the bottom half of each wrap and top with chips.
Fold each side of the wrap inwards, then fold upwards from the bottom to create a pocket.
Enjoy fresh or toasted in a sandwich press!
