ULTRA KETO air fried chicken wraps

INGREDIENTS

5 Farrah’s Ultra Keto Wraps

Air Fried Chicken
1 ½ cups almond flour
4 boneless chicken thigh, cut into bite size pieces 
1 egg, beaten

Slaw
⅓ cup mayonnaise
Juice from ½ lime
2 ½ cups green and red cabbage, shredded 
1 carrot, grated
Spring onions, finely sliced

Fillings
Pickled radish
Kimchi or avocado

METHOD

  1. To make air fried chicken, combine almond flour, salt and pepper in a bowl. Dip the chicken in the beaten egg, then gently toss in the almond mixture. 

  2. Place in an airfryer basket and air fry at 200°C for 15 minutes or until cooked through, tossing halfway.  

  3. To make the slaw, combine mayonnaise and lime juice in a large bowl. Season with salt and pepper. Mix well, then add cabbage, carrot and spring onion and toss to combine.

  4. Heat the wraps in the microwave for 10 seconds or until just warm. Cut each tortilla from the centre towards you. Place a little slaw on one quarter, pickled radish on another, air fried chicken on the third quarter and kimchi on the fourth.

  5. Fold the wrap, starting from the bottom left quarter, folding into each quarter in a clockwise direction. Enjoy!
