KETO BERRIES & CREAM STACK

INGREDIENTS
1 packet Farrah’s Ultra Keto Tortillas
100g butter, melted
1 Tbsp ground cinnamon
1 Tbsp monkfruit sweetener
Frozen blueberries and raspberries (thawed)
Unsweetened Dairy Whip (we used Tatua brand)
Sugar Free maple syrup
Fresh mint
METHOD
Using a sharp knife, cut rectangles out of the tortillas. Brush each side with melted butter.
Combine monkfruit sweetener and cinnamon. Using tongs, flip each tortilla rectangle in the mixture to coat each side.
Place each rectangle in the airfryer basket and air fry for 10 minutes at 200°C or until golden and crispy (you may need to flip half way during cooking to get crispy on both sides).
Build your stack by squirting whipped cream on top of a tortilla rectangle. Add another tortilla rectangle on top, and squirt with whipped cream. Top the final layer with a handful of thawed berries and drizzle with sugar free maple syrup.
Garnish with fresh mint and enjoy!
