ULTRA KETO broccoli & bacon wraps

Serves: 5

INGREDIENTS

5 Farrah’s Ultra Keto Wraps
8 rashers bacon, diced
1 red onion, thinly sliced
1 broccoli, cut into florets
1 ¼ cups cheddar cheese, grated
¼ cup sunflower seeds, toasted

Dressing:
1/2 cup Greek yoghurt
2 Tbsp extra virgin olive oil
1 tsp Dijon mustard
1 Tbsp apple cider vinegar

METHOD

  1. To make the dressing, add the dressing ingredients to a small bowl and stir to combine. Season with salt and pepper to taste. 

  2. Heat a frying pan over medium heat, then cook the bacon until crispy. Remove from the pan and set aside.

  3. In the same pan, cook the red onion until softened, then add the broccoli and cook until tender. Add salt and pepper to taste.  

  4. Warm the wraps in a pan or microwave for 10 seconds, as per the back of pack instructions.

  5. Assemble wraps by sprinkling cheddar cheese in the centre of each wrap. Top with broccoli, red onion, and bacon. Drizzle with the dressing and finish with a sprinkling of sunflower seeds. 

  6. Roll up tightly, folding the bottom first then the sides. Enjoy!
