ULTRA KETO samosas

Makes 10

INGREDIENTS

5 Farrah’s Ultra Keto Wraps
1 small onion, diced
2 cloves garlic, finely chopped
2cm piece of ginger, finely chopped
½ small cauliflower, cut into 1.5 cm pieces
½ cup frozen peas
½ tsp ground turmeric
½ tsp ground cumin
½ tsp ground coriander 
¼ tsp garam masala
1 tbsp lemon juice
Fresh coriander, chopped 
1 egg, beaten
1-2 cups oil (for frying)

METHOD

  1. Heat a frying pan over medium heat. Cook onion, garlic, and ginger with a dash of olive oil until softened. Add cauliflower, peas, and spices and cook until the cauliflower is tender.

  2. Stir through lemon juice and coriander. Season with salt and pepper to taste. Set aside to cool. 

  3. To assemble the samosas, cut each wrap in half and brush half the cut edge with the beaten egg. Roll into a cone, overlapping to seal. 

  4. Fill with the cauliflower mixture, then brush the inside edge with egg. Overlap the ends to seal. Repeat with the remaining wraps and filling. 

  5. In a medium sized pot, heat oil ready for frying. 

  6. Place samosas seam side down into the hot oil and fry until golden brown, turning once. Serve with a coriander and mint yoghurt and enjoy!
