Vegetarian pizza

Makes 1

2 Farrah’s Italian Herb Wraps
3 tbsp tomato paste
Feta cheese
Sundried tomatoes
Mushrooms, sliced
Red onion, sliced
Mozzarella cheese, grated
Spinach
Fennel fronds, to garnish

Preheat oven to 180°C.

Place one wrap on a baking tray and spread with 1 tbsp tomato paste and a light sprinkling of mozzarella cheese. Place the other wrap on top, then spread that wrap with the remaining tomato paste.

Assemble your pizza with the ingredients, leaving off the spinach and fennel fronds.

Bake in the oven for 10–12 minutes, until the edges are crisp, and the mozzarella has melted. Before removing from the oven scatter spinach leaves on the pizza and bake for another 2 minutes to slightly wilt the spinach.

Remove from the oven and top with fresh fennel fronds and season with salt and pepper.
