winter veggie freezer wraps

Makes 6 (perfect for meal prepping!)

INGREDIENTS

Roast veggie/bean mix
1 small cauliflower, cut into florets
2 onions, cut into wedges
1 small pumpkin, cut into cubes
2 carrots, cut into chunks
¼ cup olive oil
2 cans black beans, drained 
1 pack Farrah’s Taco Spice Mix


Other fillings
3 cups cooked couscous 
4 cups baby spinach 
6 Farrah’s Garden Spinach Wraps
Hummus

METHOD

  1. Preheat the oven to 180°C. 

  2. Place all the roast veggie ingredients except the black beans and Farrah’s Taco Spice Mix onto a lined baking tray and toss to combine.

  3. Roast for 30 minutes or until almost tender, then add black beans and Farrah’s Taco Spice Mix. Season with salt and pepper and toss to combine. Roast for an additional 5 minutes.

  4. In a large bowl toss, together couscous and baby spinach. Season with salt and pepper to taste.

  5. Lay out wraps and spread the base of each with hummus. Top with spinach couscous and roast veggie/bean mix.

  6. Roll up tightly and wrap in baking paper. Serve immediately or store in the freezer for up to 3 months. 

  • To reheat, thaw overnight in the fridge and toast in a sandwich press until heated through.
