High Fibre breakfast quesadilla
MAKES 1
INGREDIENTS
1 x Farrah’s High Fibre Wrap
1 Tbsp of Farrah’s Taco Spice Mix
Large handful of baby spinach
1/2 cup canned black beans, rinsed and drained
1/2 red capsicum, diced
2 x eggs
1/4 cup grated cheddar cheese
1/2 avocado, sliced
Salt and pepper
Your choice of hot sauce or relish to serve
METHOD
Heat olive oil in a non-stick pan over medium heat. Add spinach to the pan and cook for 20 seconds until lightly wilted. Remove and set aside.
To the same pan, add the black beans and capsicum. Sprinkle over Farrah’s Taco Spice Mix and fry for 2 - 3 minutes until fragrant and the capsicum has softened. Remove from the pan and set aside.
Wipe the pan out with a paper towel, and pour in the eggs. Season with salt and pepper. Cook gently over medium heat, folding slowly until just set and still a little creamy.
To make the quesadilla, drizzle some oil a hot pan and add your wrap. Top with grated cheese, scrambled egg, wilted spinach, beans and capsicum and fold in half. Flip when golden brown. Remove from the pan and serve with your choice of sauce and sliced avocado on the side.
