APPLE & APRICOT DESSERT TAQUITOS


SERVES 3-6

INGREDIENTS

3 x Farrah’s Apple and Cinnamon wraps
2 cans halved apricots
1 Tbsp cornflour
2 tsp sugar

Coating:
10g butter, melted
2 Tbsp sugar
1 tsp cinnamon

To serve:
Vanilla bean ice cream
Caramel sauce

METHOD

Preheat oven to 180°C. Line a baking tray with baking paper.

Drain the apricots through a sieve. In a pot, whisk together apricots and cornflour. Next add 2 teaspoons of sugar and place over a medium heat.

Simmer for 8-10 minutes until the apricots have softened, transfer to a heat proof dish and place in the fridge or freezer to cool.

In a bowl, mix together sugar and cinnamon. Brush one side of the wraps with the melted butter and sprinkle over combined sugar and cinnamon.

Flip the wraps over and place scrunched tinfoil on one side and roll up tight to 2cm thickness. The tin foil will help keep the shape. Secure the wrap with a toothpick. Bake for 10 - 12 minutes until golden and crisp.

Remove from the oven and place on a baking rack to cool.

Fill a piping bag with the cooled apricot filling. Remove the tin foil from the wraps and pipe the apricot into each end.

Serve with ice cream and a drizzle of caramel sauce.
