Fish Tacos

Makes 12

12 Farrah’s Taco Tortillas
600g Skinless white fish
4 Tbsp’s Olive Oil
¼ cup Coriander
1 lime, zest and juice
Cos lettuce, chopped
Purple cabbage, shredded

For the Corn and Pineapple salsa:
1 cup Pineapple, finely diced
1 can Corn kernels, drained and rinsed
1 Tomato, finely chopped
1 Lime, juice

Serve with Avocado Crema

Place fish, olive oil, coriander and juice and zest from 1 lime in a bowl and let marinate for 30 minutes.

Heat a pan on a medium-high heat. Remove fish from marinade and grill fish for 3 to 4 minutes on each side. Flake with a fork.

In a bowl mix the salsa ingredients.

In another small bowl mix together the avocado crema ingredients

To serve: Place lettuce, cabbage, salsa, fish and avocado crema in Farrah’s Taco Tortillas.

  • Avocado Crema is very simple to make, just combine; crushed garlic, 2 avocados, sour cream and lime juice and mix into a smooth sauce.
