Spiced Berry tarts
Makes 12
INGREDIENTS
6 Farrah’s Low Carb Tortillas
½ cup mascarpone
1 cup low carb custard
1 tsp mixed spice
1 punnet strawberries (sliced)
1 punnet raspberries
Honey alternative (we used Nothing Naughty Fibre Syrup)
METHOD
Preheat oven to 180°C fan bake.
Mold Low Carb Tortillas into muffin tins and place in oven for 6 to 8 minutes or until golden and crisp. Leave to cool.
To make the filling, in a bowl mix together mascarpone, custard, and mixed spice.
Fill the cooled tart shells with the filling and top with sliced strawberries and raspberries
Drizzle with fibre syrup to serve.
