thai green curry with cheesy garlic wraps

Ingredients

Cheese and Garlic Wraps

4 Farrah’s Garlic Butter Wraps
1/4 Cup Mozzarella, grated
Spray oil or butter, melted
1 Tbsp Coriander or parsley, chopped

Thai Green Chicken Curry

1 Tbsp Olive oil
1 Onion, diced
5 Boneless chicken thighs, diced
2-3 Tbsp Thai green curry paste
1 1/2 cups Chicken stock
100g Green beans, chopped
1 can Coconut cream
1 dash of Fish sauce
Lime Juice
Fresh coriander, chopped

Method

  1. Heat oil in a large shallow saucepan and sauté onion, chicken pieces, and curry paste for 2-3 minutes until fragrant and just coloured.

  2. Add chicken stock and simmer 4-5 minutes, then add coconut cream and beans and heat gently until the sauce thickens and beans are tender.

  3. Finish with a dash of fish sauce and a squeeze of lime, then garnish with chopped coriander.

  4. To make the Cheesy Garlic Wraps, sprinkle cheese and chopped herbs over half of each wrap then fold over to enclose the cheese. Spray outside of the wrap with oil, then bake in oven for 5-8 minutes until golden and the cheese is bubbling (or cook on the sandwich press or pizza oven for a few minutes).

  5. Cool slightly then cut into large wedges. Serve with curry and enjoy!
