tortilla chips & guacamole

Ingredients

Tortilla Chips
1 Packet Farrah’s Low Carb Tortillas
Olive Oil
Salt

Guacamole
3 Avocados, smashed with a fork
½ Red onion, finely diced
1 Tomato finely diced
½ Red capsicum, finely diced
Juice of 1 lime or lemon
½ tsp Garlic, crushed
Salt and pepper to taste

Optional
Chillies, finely diced
Coriander, finely chopped

Method

  1. Preheat oven to 180°C.

  2. Place wraps on a chopping board, lightly rub or spray one side of each wrap with olive oil, then sprinkle with salt (or seasoning of your choice).

  3. Using a sharp knife, cut the tortillas into triangular shapes.

  4. Lay the tortilla shapes out on baking trays. Bake for 6-8 minutes or until lightly golden.

  5. Remove from oven and allow to cool on a rack or a cold bench.

  6. To make the guacamole, combine all remaining ingredients in a bowl and mix together.

  7. Serve with the tortilla chips and enjoy!
