CHICKPEA SUPERFOOD WRAPS
Farrah’s Superbeet Wraps
Carrots (thinly sliced)
Salt and pepper
Red Onion (thinly sliced)
Preheat oven to 180°C. Line a baking tray with baking paper. Place cubed pumpkin into a bowl with a drizzle of olive oil and season with salt and pepper.
Bake for 20 minutes or until pumpkin is golden and soft.
Thinly slice peeled carrots and red onion. Shred the purple cabbage into small pieces,
Lay out Superbeet Wraps with ingredients. Spread base of Wrap with pesto or other desired spreads.
Assemble Wraps by laying out each differently coloured ingredient in individual lines, so that when rolled up, each colour will be distinct.
Roll up tightly and wrap in parchment paper for an easy, to go lunch.
