zUCCHINI WRAP ROLL UPS

INGREDIENTS
2 Farrah’s Premium White Wraps
2 Tbsp Mayonnaise 
6 Slices Shaved ham
2 Zucchinis
1 - 1/2 Cups Gruyere cheese, grated 
6 Eggs
3/4 Cup Milk
1 Tbsp Fresh parsley, chopped
Olive Oil Spray

METHOD

  1. Preheat BBQ to 250°C (The Tradie BBQ used a Weber Kettle), or preheat oven to 180°C. Grease muffin tray with oil spray.

  2. Slice ends of zucchinis and discard. Using a vegetable peeler, slowly cut each zucchini into thin strips.

  3. Place tortillas onto board and spread with thin layer of mayonnaise, right to the edges. Sprinkle over a handful of cheese, followed by sliced ham, zucchini strips, and another round of cheese.

  4. Roll tortillas up tight, trim each end, then slice into 12 even sized pieces. Place rolls into greased muffin tray.

  5. Whisk eggs, milk, and parsley together, then pour eggy mixture over each roll.

  6. Top with remaining cheese and bake for 30 minutes, or until golden brown and the egg has set. Be sure to spin the tray every 10 minutes as it cooks. If you’re using the oven, reduce bake time to 20 minutes.

  7. Serve and enjoy!

  • These rolls are the perfect addition to your lunch box! For a vegetarian option, swap the ham for diced red capsicum or feta cheese.
