ROAst Capsicum Wraps

Serves 1-2

4 Fire Roasted Pepper Wraps
Chicken breasts or thighs
2 limes (juiced)
2 capsiums red, green or yellow
1 medium sized onion
shredded lettuce
1/2 cup mashed avocado
1/4 cup fresh chopped coriander
1 diced tomatoes
Greek yoghurt or ricotta (optional spread)

Slice capsicum into long strips and roast in an oven tray with a splash of oil until soft and caramelised.
