Spiced Berry tarts

Makes 12

INGREDIENTS

6 Farrah’s Low Carb Tortillas
½ cup mascarpone
1 cup low carb custard
1 tsp mixed spice
1 punnet strawberries (sliced)
1 punnet raspberries
Honey alternative (we used Nothing Naughty Fibre Syrup)

METHOD

  1. Preheat oven to 180°C fan bake.

  2. Mold Low Carb Tortillas into muffin tins and place in oven for 6 to 8 minutes or until golden and crisp. Leave to cool.

  3. To make the filling, in a bowl mix together mascarpone, custard, and mixed spice.

  4. Fill the cooled tart shells with the filling and top with sliced strawberries and raspberries

  5. Drizzle with fibre syrup to serve.

  • Try using other summer fruit, like peaches and blueberries.
  • These are great as an alternative to the classic Christmas Mince Tart, a Farrah's Kiwi twist.
