crispy feta fried egg taco

 

INGREDIENTS

Cooking oil spray

1 large egg

20g feta cheese

1 Farrah’s Low Carb Tortilla

¼ avocado

Dried oregano

Red chilli flakes

1 small lemon

Pink pickled onions

METHOD

  1. In a small frying pan, add a spray of cooking oil and crumble the feta cheese over the outer circle of the pan. 

  2. Allow the feta to sizzle and sauté over a medium heat for a few minutes, so the cheese melts (without burning). Gently crack the egg in the centre of the pan. 

  3. Season the egg with a pinch of dried oregano and red chilli flakes. 

  4. Meanwhile, in a dry fry pan over medium heat, warm the tortillas for 5 to 10 seconds on each side. 

  5. Smash the avocado on top of the tortilla, and add a squeeze of lemon juice. 

  6. When the egg is cooked to your liking and the cheese has created a golden brown crust, gently remove from the pan using a spatula and place on top of the tortilla. 

  7. Garnish with pickled onions, salt, and pepper, and enjoy!
